Shavuot Dove Bread

A traditional, herb-infused bread shaped into doves to symbolize the Giving of the Torah. A beautiful, symbolic centerpiece for your Shavuot table.

Ingredients
  

  • 1 cup warm water
  • 1 Tbsp yeast
  • 3 cups white bread flour or 2½ cups white bread flour and ½ cup whole wheat
  • 3 Tbsp olive oil
  • 1 tsp salt
  • 1 Tbsp rosemary fennel, or anise seed

  • 1 Food processor or mixer
  • 1 Baking pan
  • 1 Parchment paper

Method
 

  1. Dough Preparation: Dissolve the yeast in warm water. Combine all ingredients in a food processor or mixer and blend until the dough pulls away from the sides. Remove and knead by hand until smooth. Cover and let rise in a warm place for 30–60 minutes.
  2. Shaping: Divide dough into 8 equal pieces. Roll each into a 5/8" log. Tie each log into a simple knot.
  3. Details: Flatten the tail end and cut slits to create "feathers." Pinch the top end to shape the head and beak. Use a small knife to create an eye slit and insert a peppercorn on each side.
  4. Second Rise: Place on a parchment-lined, floured baking pan. Spray lightly with vegetable oil, cover with a towel, and let rise for 30 minutes. Preheat oven to 390°F.
  5. Bake: Bake for 20 minutes or until golden brown. Remove and cover with a dish towel immediately to keep them moist.
